Oregon's Dundee Hills built its name on Pinot Noir. The wine that now brings people up the same hillsides is made from the same grapes, picked earlier, and left alone for years.

Perlee, an estate founded by Tiffany and Grant Austin, welcomes its first guests on Saturday, 1 August. It arrives into a region that has been making traditional method sparkling wine for a long time without making much noise about it.
